Harissa - condiment & seasoning




Harissa
- Both a condiment and seasoning, provides a hot, smoky essence from mix of dried chili peppers, cumin, coriander, and caraway seeds.

Snack

Any Season




2 oz dried chilies
2 cloves of garlic
1 tsp cumin
1 tsp  coriander
1 tsp caraway
2 tbsp  olive oil
salt to taste
1 plum tomato
Water




1. Soak peppers in warm water until soft. Seed them, drain them and preserve approximately two ounces of the water.
2. Toast, cool and finely grind dried spices.
3. Mix all the ingredients in blender until smooth.
4. Add salt and taste for seasoning.
